Pumpkin Granola Clusters: A Crunchy, Cosy Taste of Autumn

When autumn rolls around, my mornings start to feel a little slower, a little more comforting – and breakfast becomes something to truly savour. These pumpkin granola clusters are one of my favourite ways to bring that seasonal feeling into the kitchen.

They’re crunchy, lightly spiced, and just sweet enough – perfect over yoghurt, with milk, or simply by the handful as a snack. Plus, they fill your home with the most wonderful, toasty scent of cinnamon and pumpkin as they bake.

Ingredients

  • 250 g rolled oats
  • 60 g chopped nuts (pecans, walnuts, or almonds work beautifully)
  • 30 g pumpkin seeds
  • 2 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • Pinch of salt
  • 120 g pumpkin purée
  • 100 g maple syrup (or honey)
  • 40 g coconut oil (melted)
  • 1 tsp vanilla extract

Optional add-ins after baking:

  • 60 g dried cranberries or raisins
  • A handful of dark chocolate chips

Recipe

Step 1: Preheat & Prepare

Preheat your oven to 160°C (fan) and line a baking tray with parchment paper.

Step 2: Mix the Dry Ingredients

In a large bowl, combine the oats, nuts, pumpkin seeds, spices, and salt.

Step 3: Combine the Wet Ingredients

In a smaller bowl, whisk together the pumpkin purée, maple syrup, coconut oil, and vanilla extract until smooth.

Step 4: Mix & Form Clusters

Pour the wet mixture into the dry ingredients and stir until everything is evenly coated. Spread the mixture onto your baking tray in clumps – pressing lightly with a spoon to help create those delicious clusters.

Step 5: Bake to Perfection

Bake for 25–30 minutes, stirring once halfway through. Watch closely towards the end; you want the granola golden and crisp, not burnt. Allow to cool completely before breaking into clusters.

Step 6: Add Finishing Touches

Once cooled, stir in your dried fruit or chocolate chips if using. Store in an airtight jar or container.

Serving Ideas

  • Sprinkle over Greek yoghurt with a drizzle of honey.
